One of the most prized steaks you can get off a cow. You want your steaks around 145 degrees for a medium rare. A way that we enjoy cooking them is to sear them hard on the grill and get those carmelized grill markes and then put in a hot cast iron pan in the oven at 350 with a pad of butter and seasoning of your choice. Bring it up to 145 and then let it rest for 10 minutes. Enjoy.
