This was a new cut for us and Oh my gosh!!! John fixed it for a Mongolian stir fry we both like and I couldn't believe how tender it was. Cook it hot and fast and it was so perfectly tender. I don't think he even marinated it! A cut that comes off the bottom of the cow so it has a perfect marbling that makes the tenderness.
